There is no unit menu to pick from: the amount is a free field, and you write in it whatever the recipe says. “1 cup”, “2 tbsp”, “a pinch”, “a coffee mug's worth”: it is taken exactly as written, word for word. Family recipes are not measured to the gram, and neither is the image.
Yes. The “+” button that appears between two steps inserts a line right there, and the numbering redoes itself. Same for the ingredients. Nothing forces you to retype it all in order.
No. Drop the document at the top of the workshop (Word, OpenDocument, PDF, text file, saved web page) and the fields fill themselves in: the title, whose recipe it is, the servings, the times, the ingredients with their amounts, the steps in order. The site tells you what it understood and what is still missing, you read it over and fix what is off. If the file resists, a PDF that is only a scan for instance, paste the text into the box provided. The document is never kept: it is read just long enough to fill the form, then it is gone.
No. If you do have one, photograph a piece of it and it will be cleaned up and set into the image as a genuine touch. Without handwriting, the whole thing is set in type, and it is just as beautiful.
